Judges' notes

Hotel of Beauty 2010 and Hotel Restaurant of the Year 2011-winner, Greywalls is unquestionably one of Scotland's most distinctive country house hotels. An architectural delight by Sir Edwin Lutyens it sits in gardens inspired by Gertrude Jeckyll: what a partnership; what a joyous result. The curving, warm beige stone façade embraces arriving guests and manager Duncan Fraser leads an equally welcoming team. Originally named High Walls, nobody is quite sure why the possibly inapt Greywalls was chosen!

A more recent and distinguished partnership has lately elevated this celebrated place once more. Closed for a while as an hotel, it re-opened in 201o under the management of
ICMI with food direction by the one and only Albert Roux. The result this time has brought new investment to charming bedrooms and a highly focussed dining operation offering superb taste, variety and indeed value. Critics are impressed.

Chef Derek Johnston, decidedly a rising star chef, heads up a skilled team incl. P
âtissier of the Year 2011 Ross Baxter. Chez Roux restaurant is a classic space given a contemporary twist; pretty windows overlook Muirfield golf course and the sea. From afternoon teas to Sunday lunches or celebration dinners the venue and food work in a rare harmony. Relax in library, drawing room, smart bar or on the terrace when fine; enjoy the walled gardens with statuary, photogenic lines of sight, oculus and quiet places.

Edinburgh is only half an hour or so by car; North Berwick much closer. Golf apart, local attractions include the Museum of Flight (which has a magnificent Concorde), Tantallon Castle and the Scottish Seabird Centre. East Lothian has a rolling, seaside charm about it. Greywalls was popular with kings and high society from the off. Today, happily, it is an on-form country hotel without direct equal in Scotland.
