Judges' notes

The dramatic Torridon mountains ringing this former home of earls echo to gloriously Gaelic names: Liathach, Beinn Alligin, Beinn Eighe, Sgorr Ruadh. At Loch Torridon's edge there is some pasture yet, and forest; it is here that the Scottish Hotel of the Year 2011 clings to a fringe of greenery and nourishes guests - and a herd of prime Highland cattle. The Torridon's a grand country house hotel with a dashing streak; its restaurant is rated (upped to 3 AA rosettes in 2011); its whisky bar an absolute gem.

Dan and Rohaise Rose-Bristow have overseen gradual upgrading of the hotel; it actually won the national hotel title back in 2004 but has come on considerably since then. Bedrooms range from wisely-left chintzy elegance to bang-up-to-date designer boutique rooms and suites. We love the contrast and choice. Visitors of any generation might find a bedroom to adore. Manager Robert Ince has given great service here over the years and the whole team strike a nice balance between high-end hotel pro and informal friendliness.

The Torridon also embraces an activity centre and offers a peerless range of supervised outdoor adventure; a key part of their winning formula. Near the old house - with it's richly-panelled walls, plush lounge, open fires, mysterious zodiac ceilings and latin-inscribed cornicing - is an inn where you might stay for a good deal fewer spondulicks. Again, we like these options. Along with a secluded, 2-bedroomed boat house it's all run under one brand.

Head chef Bruno Birkbeck is undoubtedly a rising star. A deft touch leaves natural flavours to speak for themselves while his technical skill elaborates the finest Highland produce, creating colourful and memorable dishes vibrant with pleasure-giving qualities. The restaurant itself is simply lovely.
